  • Preheat oven to 356 °F. Grease a baking sheet with butter, line with parchment paper, and set aside.
  • In a bowl, sift flour and baking soda. Add cinnamon powder and salt. Mix all the ingredients with a silicone spatula until incorporated.
  • In a mixer on medium speed, mix butter, raw sugar, and sugar for 3 to 6 minutes until soft and fluffy.
  • Add eggs one by one and vanilla essence. Scrape the edges of the bowl with a spatula and mix before adding each new ingredient.
  • Add dry ingredients mixture little by little and keep mixing on low speed making sure the ingredients start combining. Once completely incorporated, add dried cranberries, shredded coconut, pecans, and raisins and mix on low speed. Refrigerate for 15 minutes.
  • Using your clean hands or a scoop, make ping-pong-sized cookie dough balls. Flatten each cookie dough ball with your hand to form the cookies. Arrange oatmeal cookies on a parchment paper-lined baking sheet leaving free space in between as they will expand. Bake at 356 °F for 18 minutes. Let oatmeal cookies cool before serving.
