  • In a blender, combine guajillo chile, garlic cloves, achiote, apple cider vinegar, orange juice, cumin, black pepper, and salt, and blend for 5 minutes or until a homogenous paste is obtained. Set aside.
  • In a skillet or griddle over high heat, heat oil and add oyster mushrooms. Season with salt and pepper and cook for 5 minutes. Pour in about 3 tablespoons of achiote mixture and fry for 10 more minutes until reduced and until al pastor oyster mushrooms are golden-brown.
  • For assembling the oyster mushroom al pastor tacos: Place 3 tortillas on a plate and stuff with two tablespoons of oyster mushroom al pastor. Garnish oyster mushroom al pastor tacos with cilantro, onion, and roasted pineapple, and serve with lime and guacamole.
