  • Preheat oven to 338 °F.
  • For the dough: Hydrate yeast in lukewarm water and allow yeast to activate for about 10 minutes.
  • In a mixer, add wheat flour, sugar, salt, eggs, water, milk, and hydrated yeast. Mix until a homogenous dough is formed.
  • Add butter and orange zest. Keep mixing until a soft and elastic dough is formed.
  • In a greased bowl, let dough rest covered for 1 hour or until dough doubles its size. Divide dough into three.
  • For the chocolate and almond three kings cake: Melt butter and chocolate. Add icing sugar and cocoa powder. Mix until a paste is formed.
  • On a floured surface, roll out one third of the dough to an 11.8x15.7 inches square.
  • Using a silicone spatula, spread chocolate filling. Add almonds. Roll. Cut dough lengthwise.
  • Braid both parts of the dough. Place on a baking sheet. Let rise for 1 hour. Brush with egg yolk. Bake for 45 minutes. Let cool and garnish with icing sugar.
  • For the mini three kings cakes: Cream butter. Add flour, icing sugar, and egg yolks. Mix until a paste is formed. Set aside half of the paste for the crust of the cream cheese three kings cake.
  • On a floured surface, cut another third of the dough into small balls of about 1.7 ounces each. Using your hands, shape dough balls into rings. Place on a baking sheet.
  • Make small balls with the crust. Place on top of the mini three kings cake. Add fruit paste strips. Brush with egg. Let rise for 15 more minutes. Bake for 20 minutes. Cool and serve.
  • For the cream cheese three kings cake: Mix icing sugar, cream cheese, and orange zest. Set aside.
  • On a floured surface, roll out the remaining third of dough to a 15.7x7.8 inches rectangle. Add cream cheese filling and roll. Using your hands, shape it into a ring.
  • Place on a baking sheet. Make sugar crust balls with your hands. Place crust balls on top of the ring. Brush with egg. Add candied fruits. Let rise for 30 minutes.
  • Brush once more. Sprinkle sugar on top of the crust. Bake for 35 minutes. Cool and serve.
