Chocolate Bunny Three Kings Cake

  • 100 milliliters cow's milk, lukewarm, for the yeast
  • 8 grams dry yeast, for the yeast

  • 3/4 cups pecans, toasted, for the dough
  • 1 cup flour, for the crust
  • 1 cup icing sugar, for the crust
  • 1 cup butter, for the crust
  • 1 egg yolk, for brushing
  • 1 cup almonds, finely chopped
  • 11 chocolate bunnies
  • some white chocolate, melted, for garnish

  • Preheat oven to 338 °F.
  • Hydrate yeast in lukewarm milk. Let rest for 10 minutes.
  • For the dough: Combine sugar, salt, milk with yeast, eggs, vanilla essence, and orange zest in a mixer. Mix until a firm and elastic dough is formed.
  • Add butter and pecans. Mix until perfectly incorporated. Place dough in a previously greased bowl and cover with plastic wrap. Let rise for 2 hours or until dough doubles its size.
  • For the sugar crust: Mix flour, icing sugar, and butter until a firm dough is obtained. Refrigerate.
  • On a floured surface, punch down dough. Using your hands, shape dough into a long strip. Join the ends to make a ring.
  • Insert the plastic figurines through the bottom part of the ring. Transfer bread to a baking sheet. Let rise for 20 more minutes.
  • Using your hands, shape the sugar crust. Brush bread with egg yolk. Place sugar crust on top alternating with almonds. Leave blank spaces between the crust and the almonds.
  • Bake for about 20 minutes or until done. Remove and let cool.
  • Melt 8 chocolate bunnies in the microwave in 30-second intervals. Cover spaces with melted chocolate. Stick remaining chocolate bunnies on top. Let dry.
  • Garnish chocolate bunny three kings cake with melted white chocolate. Let dry.
