Concha Donuts

Donuts and conchas are two of the most delicious and popular types of pan dulce. Equally tasty and fluffy, it is hard to choose only one, but these donut conchas, or donchas, have come to save the day! As delish as can be, concha donuts combine an irresistible vanilla and chocolate concha crust and the iconic shape of donuts for a sweet treat that is best enjoyed with a glass of milk.

  • 1 cup cow's milk, lukewarm
  • 11 grams dry yeast
  • 5 cups flour
  • 1 cup sugar
  • 1 teaspoon salt
  • 1 egg
  • 1 1/4 cups butter
  • 2 tablespoons vanilla essence
  • 1/4 cups hazelnut chocolate cream
  • 125 grams butter, for the crust
  • 1 cup icing sugar, for the crust
  • 1 cup flour, for the crust
  • 2 tablespoons cocoa, for the crust

  • Preheat oven to 356 °F.
  • Sprinkle the yeast over the milk, stir, and set aside for 10 minutes to activate.
  • In a bowl, mix flour, sugar, and salt. Add egg and yeast mixture. Knead until incorporated.
  • Add butter little by little. Knead to an elastic and incorporated dough for about 10 minutes.
  • Divide dough into two. Add hazelnut chocolate cream to one part. Keep kneading until incorporated.
  • Place each portion into previously greased bowls. Cover with plastic wrap. Let rise for 1 hour or until they double their size.
  • For the crust: Beat butter, icing sugar, and flour until a dough is formed. Split dough into two. Add cocoa and mix thoroughly.
  • Place crusts between two layers of plastic wrap. Roll out using a rolling pin. Cut into circles with a cookie or donut cutter. Lightly press a concha cutter on the crust. Make the designs of your choice. Set aside in the fridge.
  • On a floured surface, place risen doughs. Gently punch out air from dough with your hands. Roll out with a 0.1-inch-thick rolling pin. Cut with a donut cutter.
  • Place dough disks on a baking sheet. Cover with crusts. Let rise for 15 minutes.
  • Bake concha donuts for 15 minutes or until done. Serve with a glass of milk.
