  • For the dough: Mix flour, yeast, and salt. Add milk, condensed milk, vanilla, and egg. Mix until perfectly incorporated. Add sugar in 3 parts making sure it is perfectly incorporated each time. Add butter in 3 parts making sure it is perfectly incorporated each time. The dough must be moist and elastic.
  • Let rise to twice its size. Punch down dough. Refrigerate until firm.
  • Once dough is ready, cut portions of about 2.8 ounces each. Reserve a bit of dough for the bones. Ball each portion of dough. Add more flour to the dough for the bones. Knead until a firm texture is obtained. Roll out dough and cut into strips. Shape strips into bones using your fingers.
  • On a baking sheet, arrange balled dough. Place strips on top like a cross. Using scissors, cut a triangle in the space between the bones. Remove the triangle. Using your fingers, pull the peaks to stretch them out to make cat ears. Slightly press on each bread to make sure they don’t fall apart.
  • Let rest for 15 minutes. Bake at 356 °F for 20 minutes.
  • While still hot, brush pieces of bread with butter. Coat with sugar. Let rest.
  • Meanwhile, prepare icing with icing sugar, a bit of water, and pink edible food coloring. Add water little by little until a semi-thick texture is obtained.
  • Garnish the Day of the Dead catto bread with pink icing and dark chocolate.
