  • 3 eggs
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 tablespoon orange zest
  • 1/4 cups orange juice
  • 1/4 cups cow's milk
  • 1 1/2 cups flour
  • 4 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • some yellow food coloring

  • Preheat oven to 338 ºF.
  • Mix eggs and sugar in a bowl. Using a whisk, beat until perfectly incorporated.
  • Add oil little by little, orange zest, orange juice, and milk. Beat until perfectly incorporated.
  • Sift flour, cornstarch, and baking soda. Add yellow food coloring and beat for 5 more minutes.
  • Place cupcake liners in a cupcake pan. Pour mixture up to ¾ of the liners. Bake for 20 minutes. Let cool and serve homemade muffins.
