Traditional Conchas

  • 2 1/2 cups flour
  • 4 eggs
  • 1 cup sugar
  • 3/4 cups margarine
  • 4 tablespoons yeast
  • 1/2 cups water
  • 1/2 cups cow's milk
  • 3/4 cups wheat flour, for the crust
  • 3/4 cups icing sugar, for the crust
  • 1/2 cups vegetable shortening, for the crust
  • 1 egg white, for the crust
  • 1 teaspoon cocoa, for the crust
  • 1 teaspoon vanilla essence, for the crust

  • For the dough: Heat water. Pile 1/3 of the flour and half of the sugar into a mound.
  • Mix yeast and ¼ cup of hot water.
  • Mix another 1/3 of flour, half of the margarine, activated yeast, and 2 eggs until a homogenous mixture is formed.
  • Knead and let rest covered with a wet kitchen rag for about 1 hour.
  • In a bowl, mix sugar, remaining flour, eggs, remaining margarine, and milk until a homogenous mixture is formed.
  • Mix both mixtures thoroughly.
  • Place dough in a bowl and cover with a wet kitchen rag.
  • Let dough rest for 3 hours or until doubled in size.
  • Preheat oven to 356 °F.
  • For the crust: In a bowl, mix icing sugar, lard, and flour thoroughly.
  • Divide mixture into two. Add one tablespoon of vanilla to one half of the mixture and a teaspoon of cocoa to the remaining half.
  • Let dough rest until doubled in size. Knead and form 1-ounce dough balls.
  • Grease a baking sheet and arrange dough balls leaving 1.9 inches in between.
  • Brush dough balls with egg white. Place vanilla or chocolate crust on top of each dough ball. Using a knife, score the crust.
  • Let traditional conchas rest for about 1 hour until doubled in size.
  • Bake traditional conchas for 20 minutes.
  • Let traditional conchas cool and serve.
