  • 1 cinnamon stick
  • 1 teaspoon anise
  • 1/2 cups water
  • 4 cups corn masa flour
  • 1 teaspoon baking powder
  • 2 cups vegetable oil, for frying

  • In a small pot over medium heat, heat piloncillo, cinnamon, anise, and water until a piloncillo syrup is formed. Let cool completely and set aside.
  • In a bowl, add corn masa flour, baking powder, and piloncillo syrup. Knead until incorporated and set aside. The dough must be moist.
  • Using your hands, make dough balls and flatten them slightly to form gorditas. Set aside.
  • On a skillet, heat traditional gorditas de piloncillo over medium heat for 6 minutes until golden brown and slightly fluffy.
