Turtle-Shaped Conchas

  • For the dough: In a mixer, combine flour, dry yeast, milk, butter, eggs, and salt. Using a dough hook, mix to a homogeneous and elastic dough.
  • Add lemon zest. Transfer dough to a greased bowl and cover with plastic wrap. Let rise for 1 hour or until it doubles its size.
  • For the crust: Combine all the ingredients and mix for 2 minutes until a homogeneous dough is obtained. Don’t mix too much to keep crust from overheating.
  • Using a tortilla press, flatten 1-ounce dough balls for the crust. Set aside.
  • Transfer dough to a floured surface and punch air out of dough. Cut into 2.8-ounce portions and ball with your hands. Cut into smaller portions, of about 0.3 ounces, and ball with your hands for the turtle feet.
  • Cut 20-ounce balls for the head.
  • Place turtle feet on the lower part of the concha. Repeat for the head. Place conchas on a greased and floured baking sheet. Cover conchas with the crust. Using a knife, slightly cut diamond shapes on the crust for the turtle shell. You can use a concha cutter.
  • Brush turtle feet and head with egg. Let sit for 15 minutes before baking.
  • Bake for 20 minutes at 356 ºF. Let cool and set aside.
  • Pour melted chocolate in a resealable bag and cut a small hole. Use as a pipping bag to make the eyes and mouth. Let cool on a rack.
  • Serve turtle-shaped conchas with a glass of milk.
