  • Preheat oven to 392 °F.
  • In a deep skillet over medium heat, cook bacon until it turns brown and renders fat out. Add garlic and shrimp. Season and cook until they turn color. Remove from skillet.
  • In the same skillet, melt butter and add whipping cream and cream cheese. Cook until cheese melts. Season and toss shrimp back in. Once mixture comes to a boil, remove from heat and set aside.
  • In a pot, place water, add salt, and bring to a boil. Add lasagna sheets and cook until cooked through. Drain and set aside.
  • In a baking dish, arrange lasagna sheets as the base. Place a layer of creamy shrimp on top. Place a layer of spinach on top of the creamy shrimp. Place a layer of Manchego cheese on top of the spinach. Repeat layers until baking dish is full. Top with a layer of lasagna sheets and cheese.
  • Broil in the oven for 10 minutes. Remove shrimp and spinach lasagna from the oven and serve.
