  • 1 kilo spaghetti, cooked
  • 10 dried guajillo chiles
  • 2 cups tomato purée
  • 1/4 onions
  • 2 cloves garlic, finely chopped
  • 500 grams shrimp
  • 1 goat cheese, with ash
  • 2 cups spinach
  • 150 grams pine nuts
  • 1 bunch asparagus, cut into sticks
  • 2 teaspoons salt
  • 1 teaspoon pepper

  • In a skillet over low heat, melt butter. Once butter melts, add shrimp.
  • Stir shrimp to cook evenly on both sides.
  • Add asparagus and toss thoroughly.
  • Add spinach. Once spinach turns color, add cooked spaghetti. Cook for 5 more minutes.
  • In a blender, combine onion, guajillo chile, finely chopped garlic, tomato purée, and a glass of water. Blend until smooth. Pour sauce into the spaghetti preparation.
  • Cook for 10 minutes and stir thoroughly. Add salt, pepper, and goat cheese. Mix thoroughly. Cook for 2 minutes and turn heat off.
  • Serve spicy shrimp pasta garnished with goat cheese and pine nuts.
