Tuna Mac and Cheese Casserole

  • 1/2 cups onion, chopped
  • 1 cup tomato, chopped
  • 2 tablespoons serrano chile
  • 1 cup tuna in oil
  • 2 cups elbow pasta, cooked and drained
  • 1 tablespoon salt
  • pepper
  • 1 package cream cheese, at room temperature
  • 1 teaspoon ground black pepper
  • 1 teaspoon thyme
  • 2 cups cheddar cheese, shredded
  • 1/2 cups Parmesan cheese, shredded
  • 3 tablespoons parsley, finely chopped

  • Preheat oven to 374 °F.
  • Add oil to a skillet. Add onion, tomato, serrano chile, tuna, salt, and pepper.
  • In a bowl, place warm cooked pasta and cream cheese, and mix thoroughly.
  • Add salt, pepper, and thyme, and mix thoroughly.
  • Add cheddar cheese, and mix thoroughly.
  • Add Parmesan cheese and mix thoroughly.
  • In an 11.8-inch springform cake pan, place a layer of elbow pasta, a layer of tuna mix, another layer of elbow pasta, and cheddar cheese. Bake for 15 minutes.
  • Remove from the oven. Open the clamp of the pan to release the side. Sprinkle tuna mac and cheese casserole with parsley.
