Turkey Alfredo Pasta

  • 1 cup leftover turkey
  • 1 stick butter
  • 1 teaspoon garlic
  • 1 cup Parmesan cheese, shredded
  • 1 cup whipping cream
  • 3/4 teaspoons cornstarch
  • 1/2 cans peas

  • 1/4 cups parsley, chopped

  • Bring salted water to a boil and cook pasta according to the instructions in the package.
  • In a small pot, add 1 cup of chopped turkey, 1 teaspoon of garlic, and 4 teaspoons of butter. Cook over medium heat until butter melts, garlic is cooked, and turkey is warm. Lower heat to the lowest to keep turkey warm without overcooking, either covered or not.
  • For the Alfredo sauce: In another pot, add ¼ cup of butter and 1 cup of whipping cream. Bring to a boil and lower heat. Add 1 cup of freshly shredded Parmesan cheese and stir thoroughly until melted. Add ¾ teaspoon of cornstarch for thickening the sauce.
  • Add ¼ cup chopped parsley and half a can of peas to the Alfredo sauce. Stir thoroughly and season with salt and pepper.
  • Mix cooked pasta with Alfredo sauce and top with a bit of turkey. Sprinkle more chopped parsley and shredded Parmesan cheese on top of the turkey alfredo pasta.
