  • In a pressure cooker over medium heat, place pig's feet and pour in water until ¾ full. Add garlic, onion, allspice berries, parsley, bay leaves, thyme, and salt. Cook pig's feet for 45 minutes or until cooked through. Remove pig's feet from the pot using a colander and set aside.
  • In a saucepan over medium heat, heat oil and cook garlic, onion, carrots, chiles, cauliflower, bay leaves, allspice berries, oregano, and salt.
  • Stir constantly with a spatula for about 5 minutes or until vegetables are slightly golden brown. Add vinegar, water, and pig's feet. Stir with a spoon until completely incorporated but without letting the ingredients fall apart. Remove pig's feet from heat and let sit.
  • Serve pickled pig's feet on a plate with tostadas, lime, and hot sauce.
