  • In a blender, combine corn kernels and condensed milk. Blend until smooth and set aside.
  • In a bowl, sift flour and baking powder.
  • In a bowl, cream butter. Add sugar, eggs one by one, and vanilla essence. Pour in corn mixture and sifted dry ingredients and mix until incorporated.
  • Pour batter into a previously greased and floured 7.8-inch pan. Place in the pressure cooker and cook in a water bath for 1 hour. Remove cornbread from the pressure cooker and let cool.
  • Unmold pressure cooker cornbread. Serve on a plate garnished with icing sugar.
