  • For the sponge cakes: Preheat oven to 347 ºF. Grease cake pan to keep rainbow layer cake from sticking.
  • In a bowl, mix flour, baking powder, and salt. Set aside. In a mixer, cream butter and sugar until fluffy. Add egg whites little by little and mix thoroughly.
  • Add vanilla essence and mix until completely incorporated. Add flour alternating with milk. Mix until completely incorporated.
  • Divide batter into 6 even portions and transfer to small-sized bowls each. Add a different gel food coloring to each one and mix until completely incorporated.
  • Using the same cake pan each time, bake each colorful batter separately for 15 minutes or until cooked through. Let them cool.
  • For the frosting: In a saucepan, heat sugar, lime juice, and water and cook until syrup is obtained. Do not stir.
  • In a mixer, mix egg whites and cream of tartar to stiff peaks. While mixing, add syrup. Mix until the desired consistency is obtained.
  • For assembling the rainbow layer cake: On a chopping board, place purple sponge cake and spread a layer of frosting on top. Add blue sponge cake, spread a layer of frosting, and top with green sponge cake and a layer of frosting. Place yellow sponge cake, spread a layer of frosting, and top with orange sponge cake and a layer of frosting. Place red sponge cake and spread a layer of frosting.
  • Spread a bit of frosting over rainbow layer cake and refrigerate for 30 minutes. Remove from fridge. Using a spatula, spread remaining frosting and level it. Serve rainbow layer cake.
