  • 1 1/4 cups butter, at room temperature
  • 1/2 cups sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoons salt
  • 1 teaspoon baking powder
  • 3/4 cups amaranth
  • some flour, for rolling

  • In a bowl, beat butter with sugar until smooth.
  • Add vanilla essence, eggs, flour, cinnamon, salt, baking powder, and amaranth. Mix until completely incorporated.
  • Place previous mixture on a flat surface and knead until a soft and homogeneous dough is obtained.
  • On a floured surface, roll out dough to 0.1-inch thickness. Using a round cutter, cut dough. Set aside.
  • In a griddle, cook amaranth gorditas on both sides over low heat for 4 minutes.
  • Serve amaranth gorditas hot paired with a cup of café de olla.
