  • some vegetable oil
  • 1 1/2 cups rice, soaked in hot water
  • 1/2 cups corn kernels
  • 1/2 cups Poblano chile strips
  • salt

  • 2 tablespoons lime juice

  • In a blender, combine water, garlic, and onion. Blend until smooth and set aside.
  • In a pot over medium heat, heat oil and fry rice for 5 minutes or until slightly brown.
  • Add corn kernels, Poblano chile strips, water, and cilantro. Season with salt. Cover and cook for 10 minutes. Add lime juice and cook for 10 more minutes.
