Aguachile-Stuffed Tomatoes

  • 2 tomatillos
  • 1 cup lime juice
  • 1 Habanero chile, charred  
  • 2 tablespoons fresh cilantro
  • some salt
  • some pepper
  • 500 grams shrimp, cleaned, deveined, and peeled 
  • 1 cup cucumber, cut into small-sized cubes
  • 1/2 cups mango, cut into small-sized cubes
  • 1/4 red onions, sliced
  • 4 red beefsteak tomatoes
  • 4 leaves parsley
  • 1 tablespoon extra virgin olive oil, for serving

  • In a blender, combine tomato, lime juice, Habanero chile, cilantro, salt, and pepper and blend until smooth.
  • In a bowl, combine shrimp with blended mixture. Marinate for at least 30 minutes in the fridge or until shrimp turns color.
  • Add cucumber, mango, and red onion to the marinated shrimp and mix. Adjust seasoning and set aside.
  • On a chopping board, slice off the top of each tomato and gently remove seeds and pulp. Stuff tomatoes with aguachile and garnish with parsley.
  • Drizzle a bit of olive oil over aguachile-stuffed tomatoes.
