  • For the stuffing: In a bowl, mix Manchego and cream cheese, garlic, and cilantro. Season with salt and pepper.
  • Stuff shrimp with cheese mixture and wrap each one with bacon.
  • In a skillet over high heat, cook shrimp until bacon turns crispy. Drain on a paper towel-lined plate.
  • For the dressing: In a small pot over medium heat, melt butter. Cook garlic and onion. Add tamarind concentrate, mayonnaise, chipotle chile, and lime juice. Season with salt and pepper. Reduce slightly, cool, and serve with the bacon-wrapped cheese-stuffed shrimp.
