  • 2 cups chayote, peeled, cut into medium-sized cubes
  • 4 cups water
  • 2 cups vegetable broth
  • 1 green onion, with stalk, cut into round slices
  • 1 cup Roma tomato, seeded, cut into cubes
  • 1 tablespoon vegetable oil
  • some salt
  • some pepper
  • 1 cup chayote, cooked, cut into small-sized cubes
  • 1 1/2 cups shrimp, cleaned and deveined
  • 2 tablespoons fresh cilantro
  • some fresh cilantro, for garnish
  • some lime, for serving

  • In a pot, heat water over medium heat. Add chayotes and salt. Cook for 30 minutes or until cooked through.
  • In a blender, combine chayotes, vegetable broth, green onions, and tomatoes and blend until smooth. Set aside.
  • In a pot, heat oil over medium heat and pour previous mixture. Season with salt and pepper.
  • Add chayotes and cook for 10 minutes. Add shrimp and cook for 3 more minutes.
  • Serve chayote & shrimp soup hot and pair with a glass of Mexican fruit cooler.
