  • 1 tablespoon vegetable oil, for the chipotle sauce
  • 1/4 onions, cut into quarters, for the chipotle sauce
  • 1 garlic, for the chipotle sauce

  • 2 allspice berries, for the chipotle sauce
  • 1/2 cups chicken broth, for the chipotle sauce
  • 1 tablespoon butter
  • 4 red snapper fillets, 7 oz each 
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups cherry tomato, cut into halves
  • 1/2 cups fresh cilantro, finely chopped
  • 1 tablespoon lime juice
  • 1/2 cups corn kernels
  • 1/4 cups radish, finely chopped
  • 1 tablespoon olive oil

  • For the chipotle sauce: In a deep skillet, heat oil and fry onion, garlic, tomatoes, chipotle chiles, cumin, and allspice berries until tomato skins peel off. Pour chicken broth into the skillet. Season with salt and cook until reduced. Let cool slightly.
  • Transfer previous mixture to a blender and blend until smooth. Cook for 15 minutes or until thickened.
  • In a skillet, add butter and cook red snapper. Add garlic, salt, and pepper. Cook until cooked through. Remove from heat and set aside.
  • For the corn pico de gallo: In a bowl, mix cherry tomatoes, cilantro, lime juice, corn kernels, radish, olive oil, salt, and pepper.
  • Serve red snapper spooned over with chipotle sauce and topped with corn pico de gallo. Garnish chipotle red snapper with corn pico de gallo with cilantro.
