Easy Shrimp Green Pozole

  • 2 tablespoons salt
  • 4 cloves garlic
  • 3 cups hominy corn, precooked
  • 1 kilo pork, lean
  • 1/4 onions
  • 8 tomatillos
  • 2 serrano chiles
  • 5 sprigs fresh cilantro
  • 2 sprigs fresh epazote
  • 2 cups medium-sized shrimp
  • 1 cup onion, finely chopped, for garnish
  • 5 limes, cut into quarters, for garnish
  • 1 cup Romaine lettuce, shredded, for garnish
  • 1 cup radish, cut into round slices, for garnish
  • 2 avocados, cut into small-sized cubes, for garnish
  • 1/2 cups pork rinds, cut into chunks, for garnish

  • In a pot, add water, salt, garlic, onion, pork, and hominy. Cook until hominy pops and meat is cooked through.
  • Combine tomatillos, chiles, cilantro, epazote, and a bit of hominy water in a T-fal® InfinyForce blender and blend using the “sauce” setting.
  • Add blended mixture to the pot with hominy. Adjust seasoning and cook for 20 more minutes. In the last 5 minutes, add shrimp to keep them from overcooking.
  • Serve easy shrimp green pozole garnished with pork rinds, avocado, radish, lettuce, and cream.
