Fish Tinga Tostadas

  • 4 tomatoes
  • 1/2 cups chipotle chile in adobo sauce
  • 1/4 onions
  • 1 clove garlic
  • 1 cup chicken broth
  • 2 tablespoons vegetable oil
  • 1 cup onion, sliced
  • 2 leaves bay
  • 2 cups fish fillet, finely chopped
  • salt

  • 1 cup refried beans
  • 1 cup lettuce, cut into thin strips
  • 1 cup sour cream
  • 1 cup queso fresco
  • some parsley, for garnish

  • Combine tomato, chipotle chile, onion, garlic, and chicken broth in a blender and blend until smooth. Set aside.
  • In a skillet over medium heat, add oil and fry onion until it turns color. Add sauce and season with bay leaves, salt, and pepper. Cook for 10 minutes.
  • Add fish and cook for 5 more minutes.
  • Spread a bed of refried beans on a tostada. Evenly mound the fish tinga on each tostada and top with lettuce, cream, and cheese.
  • Serve fish tinga tostadas on a plate with green salsa on the side.
