  • 4 fish fillets
  • 2 lemons, thinly sliced
  • 1 tablespoon dill, fresh and chopped
  • 1 teaspoon salt
  • 1/2 teaspoons pepper

  • On a wooden chopping board, cut zucchinis into 0.3-inch thick round slices.
  • On parchment paper, place a bed of zucchinis, from 6 to 8 slices. Place fish fillets on top. Add salt and pepper.
  • Add dill, lemon slices, olive oil, and fresh dill. Wrap by folding parchment paper in half. Roll up the edges to prevent any spilling.
  • Place on a baking sheet. Bake for 15 minutes at 356 °F.
  • Serve healthy lemon fish fillets en papillote on a plate. Garnish with fresh dill and lemon wedges. Serve with steamed rice.
