  • 1 kilo fish bones, preferably with head and tail
  • 2 tablespoons vegetable oil
  • 2 tablespoons vegetable oil
  • 2 sprigs celery, cut into chunks
  • 1 onion, cut into chunks
  • 2 carrots, cut into chunks
  • 1 leek, cut into chunks
  • 2 cups white wine
  • some water
  • 2 leaves fresh bay
  • 2 leaves fresh thyme
  • 4 black peppercorns

  • In a deep pot, heat oil. Add vegetables and fry them until onion is translucent.
  • Add white wine and bring to a boil until alcohol evaporates.
  • Add fish bones and cover pot. Cook for 5 minutes over medium-low heat.
  • Pour water into the pot and bring to a boil over high heat. Using a ladle, skim off the scum.
  • Add thyme, bay leaves, and black peppercorns.
  • Lower heat to low heat and cook for 1 to 1.5 hours.
  • Strain fish fumet, let cool, and store it in the fridge or freezer until served.
