Shrimp Avocado Cucumber Bites

  • 2 tablespoons butter
  • 1 clove garlic, finely chopped
  • 1/4 cups white onion, finely chopped
  • 2 cups shrimp, cleaned and deveined 
  • 1 tablespoon paprika
  • 1 pinch salt
  • 1 pinch pepper
  • 2 avocados, for the guacamole 
  • 1/4 cups lime, for the guacamole 
  • 1 tablespoon garlic powder, for the guacamole 
  • 2 tablespoons olive oil, for the guacamole 
  • 1 tablespoon serrano chile, finely chopped, for the guacamole 
  • 1 pinch salt, for the guacamole 
  • 2 cucumbers
  • 2 tablespoons parsley, finely chopped

  • In a skillet, heat butter over medium heat. Cook garlic, white onion, and shrimp. Season with paprika, salt, and pepper. Set aside.
  • In a bowl, combine avocado, lime juice, garlic powder, olive oil, and serrano chile. Season with salt.
  • On a chopping board, cut unpeeled cucumber into thick slices. Spread a bed of guacamole over the cucumber slice and top with shrimp. Garnish shrimp avocado cucumber bites with parsley.
