Shrimp Croquettes in Habanero Sauce

A delicious appetizer like no other, these shrimp croquettes in Habanero sauce are a great recipe for Lent that will make you forget all about meat. Crispy on the outside and creamy on the inside, these shrimp croquettes are stuffed with cream cheese and are served on a spicy Habanero sauce that will delight any palate.

  • For the shrimp croquettes: In a bowl, mix shrimp, potato, Parmesan cheese, garlic, onion, egg, breadcrumbs, salt, and pepper. Using your hands, form balls with previous mixture. Stuff each ball with a cream cheese cube in the center and ball the croquettes.
  • Dip each croquette in flour and egg and coat with corn flakes.
  • In a small pot with hot oil, fry croquettes until golden brown and drain on a paper towel-lined plate to remove excess oil.
  • For the Habanero sauce: On a griddle, char chiles, onion, and garlic. Transfer to a blender, add evaporated milk, cream cheese, and cilantro, and blend until smooth.
  • In a small pot, cook blended sauce for 10 minutes or until thick. Season with salt and pepper.
  • Ladle Habanero sauce on a plate and place croquettes on top. Garnish shrimp croquettes in Habanero sauce with fresh cilantro leaves.
