  • 1/4 cups vegetable oil, for the empanada dough 
  • 2 tablespoons sugar, for the empanada dough 
  • 1/2 tablespoons salt, for the empanada dough 
  • 1 cup water, for the empanada dough 
  • 2 cups shrimp, precooked
  • 1 cup tomato, cut into small-sized cubes
  • 1/2 cups onion, finely chopped
  • 1/4 cups fresh cilantro, finely chopped
  • some salt and pepper
  • some wheat flour, for rolling 
  • some vegetable oil, for frying 
  • some mayonnaise, for serving
  • some ketchup, for serving
  • some hot sauce, for serving
  • some avocado, sliced, for serving
  • some lime, for serving

  • In a bowl, combine flour, sugar, salt, oil, and water. Knead until a homogeneous dough is formed.
  • Place dough in a bowl and let sit for 20 minutes.
  • For the empanada stuffing: In another bowl, combine tomato, onion, and cilantro. Season with salt and pepper.
  • On a previously floured surface, form dough balls. Roll out dough balls to 0.07-inch-thick discs. Stuff discs. Crimp empanadas by pressing the edges with your fingers.
  • In a small pot, heat oil over medium heat and fry shrimp empanadas until golden brown. Drain on a paper towel-lined plate.
  • Using a knife, gently cut open shrimp empanadas making sure not to break them. Serve shrimp empanadas with mayonnaise, ketchup, hot sauce, avocado, and lime.
