  • 1 clove garlic, for the chipotle sauce

  • 2 tablespoons butter, for the stuffing
  • 1/4 cups onion, finely chopped, for the stuffing
  • 1 tablespoon garlic, finely chopped, for the stuffing
  • 2 cups shrimp, clean and peeled
  • 1 tablespoon parsley, finely chopped
  • 12 corn tortillas
  • some vegetable oil, for frying the tortillas
  • avocado, cut into slices, for serving

  • For the chipotle sauce: Combine cream, chipotle chile, cream cheese, milk, onion, and garlic on a blender. Blend until smooth.
  • Heat a skillet over medium heat. Cook chipotle sauce for about 10 minutes. Season with salt and pepper.
  • For the stuffing: Heat butter over medium heat. Cook onion, garlic, and shrimp for 5 minutes. Add parsley.
  • For the enchiladas: In a skillet heat oil. Fry tortillas. Place on a paper towel-lined plate. Set aside.
  • On a chopping board, stuff tortillas with the shrimp stuffing. Spoon chipotle sauce over a plate. Place enchiladas and spoon over more sauce. Garnish shrimp enchiladas in chipotle sauce with queso fresco, onion, cilantro, and avocado.
