  • 2 cups Poblano chile, charred, seeded, and cut into strips, for the Poblano sauce

  • 500 grams shrimp, cleaned and peeled, for the stuffing
  • 1/4 cups yellow corn kernels, for the stuffing
  • 1 cup Poblano chile strips, for the stuffing
  • 6 sea bass, fillets, 5.2 oz each
  • 3 baby corn, cut in half lengthwise

  • Preheat oven to 356 °F.
  • For the Poblano sauce: In a blender, combine Poblano chile, garlic, onion, evaporated milk, cream cheese, salt, and pepper and blend to a smooth sauce. Set aside.
  • In a small pot with oil, bring sauce to a boil. Remove from heat and set aside.
  • For the stuffing: In a skillet over medium heat, heat olive oil and cook garlic, onion, shrimp, corn kernels, and Poblano strips. Season with salt and pepper and set aside.
  • On a chopping board, season sea bass fillets with salt and pepper and stuff with previous preparation. Roll, center a baby corn on top, and tie with a corn husk strip. Secure with a toothpick.
  • Arrange sea bass rolls on a parchment paper-lined baking sheet and bake for 12 minutes. Remove from oven. Serve shrimp-stuffed sea bass with Poblano sauce.
