Skillet Chipotle Shrimp

This skillet chipotle shrimp is the perfect meal for Lent season or a twist on your everyday menu.   • 1/4 white onions, roasted, for the chipotle adobo
  • 1 clove garlic, unpeeled, roasted, for the chipotle adobo
  • 1/2 cups chipotle chile in adobo sauce, for the chipotle adobo
  • 1 tomato, roasted, for the chipotle adobo
  • 1/4 cups water, for the chipotle adobo
  • 1/4 cups orange juice, for the chipotle adobo
  • 1/2 kilos shrimp, cleaned and deveined
  • 1/2 cups lime juice, for the marinade
  • 1/2 teaspoons salt
  • 1/2 teaspoons pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon garlic, finely chopped
  • 1 pinch salt

  • For the chipotle adobo: In a blender, combine onion, garlic, chipotle chiles in adobo sauce, tomato, water, and orange juice and blend until smooth.
  • In a bowl, add shrimp, lime juice, salt, and pepper. Let marinate for 5 minutes. Set aside in the fridge.
  • In a skillet, heat oil and butter over medium heat. Fry garlic until golden brown. Add previously marinated shrimp and chipotle sauce. Cook for 10 minutes. Adjust seasoning and set aside.
  • Serve chipotle shrimp on a plate with white rice on the side.
