Spicy Chipotle Shrimp Sandwich

  • 1/4 onions, roasted 
  • 1 clove garlic, roasted 
  • 1 tomato, roasted 
  • 1/4 cups chipotle chile in adobo sauce
  • 1/4 cups orange juice
  • 1/2 kilos medium-sized shrimp, cleaned and deveined 
  • 1/2 cups lime juice
  • 1 teaspoon Knorr® granulated chicken bouillon
  • 1/2 teaspoons pepper
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, finely chopped
  • 4 tablespoons Hellmann's® real mayonnaise
  • 4 artisan bread rolls
  • 1/2 cups refried beans
  • 1 avocado, thinly sliced

  • For the chipotle marinade: In a blender, combine, onion, garlic, tomato, chipotle chile in adobo sauce, and orange juice and blend until smooth. Set aside.
  • In a bowl, combine lime juice, Knorr® granulated chicken bouillon, and pepper and marinate shrimp for about 10 minutes.
  • In a skillet, heat olive oil over medium heat and cook garlic for 1 minute. Transfer shrimp without the marinade and cook for 3 minutes. Add chipotle sauce and bring to a boil. Once it comes to a boil, lower heat and cook until thickened.
  • Remove from heat and add Hellmann's® real mayonnaise. Mix and adjust seasoning. Set aside.
  • Cut artisan bread open along the side with a knife. Top artisan bread heel with refried beans, shrimp mixture, and avocado thin slices. Serve spicy chipotle shrimp sandwich.
