  • 1 cup Jalapeño chile, cut into small-sized cubes, for the pico de gallo
  • 1 cup white onion, for the pico de gallo
  • 1 cup fresh cilantro, chopped, for the pico de gallo
  • 1/4 cups lime juice, for the pico de gallo
  • 2 tablespoons olive oil, for the pico de gallo
  • 1 tablespoon salt, for the pico de gallo
  • 1 tablespoon pepper, for the pico de gallo
  • 1 tablespoon oregano, for the pico de gallo
  • 3 cups cream cheese, cut into cubes, for the dip
  • 2 cups canned tuna, drained, for the dip
  • 1 tablespoon garlic powder, for the dip
  • 1 tablespoon onion powder, for the dip
  • 3 tablespoons chile powder, for the dip
  • 2 tablespoons chipotle chile in adobo sauce, finely chopped, for the dip
  • some epazote, for garnish
  • some saltine crackers, Habanera-style, for serving

  • For the pico de gallo: In a bowl, mix tomatoes, Jalapeño chiles, white onion, cilantro, lime juice, olive oil, salt, pepper, and oregano. Divide mixture into two and set aside.
  • For the dip: In a bowl, mix cream cheese, half of the previous pico de gallo, tuna, garlic powder, onion powder, chile powder, and chipotle chile until completely incorporated.
  • On a chopping board lined with plastic wrap, place the dip and cover with more plastic wrap. Using your hands, shape the dip into a wreath and refrigerate for 15 minutes. Serve tuna & pico de gallo cheese ball wreath on a plate topped with leftover pico de gallo and saltine crackers around the edge.
