Tuna Salad Rolls

  • 1/4 cups celery, finely chopped
  • 1/2 cups red onion, cut into strips
  • 1/2 cups tomato, cut into cubes
  • 1/4 cups yellow corn kernels, drained
  • 1/2 cups cucumber, cut into cubes
  • 1/4 cups cheddar cheese, grated
  • 1/4 cups parsley, finely chopped
  • 1 cup mayonnaise
  • 3 pickled Jalapeño chiles, diced
  • 2 tablespoons vinegar, or pickled Jalapeño chile brine
  • 1 tablespoon lime zest
  • pinches salt

  • 1 Romaine lettuce, leaves
  • some parsley, for garnish

  • In a bowl, combine canned tuna, celery, red onion, tomato, yellow corn, cucumber, Cheddar cheese, parsley, mayonnaise, Jalapeño chiles, brine, and lemon zest. Season with salt and pepper.
  • Separate the leaves of the Romaine lettuce without breaking them. With a knife, cut the ends of the leaves off forming squares. Stuff each leaf with tuna salad and roll them up. Chill for a couple of minutes.
  • Serve with sautéed new potatoes.
