Tuna Tostadas with Chipotle Mayo

  • 3/4 cups mayonnaise
  • 1/2 cups chipotle chile
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 600 grams tuna
  • 1/4 cups soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons orange juice
  • 2 tablespoons lime juice
  • 1 teaspoon fresh ginger, finely chopped
  • 8 corn tostadas
  • 1/4 cups black sesame seeds
  • 1/2 cups leek, cut into thin strips and fried
  • 2 avocados, fanned

  • For the chipotle mayo: In a bowl, combine mayonnaise, ground chipotle chile, salt, and pepper. Using a spoon until perfectly incorporated.
  • On a chopping board, cut tuna into small-sized cubes and transfer to a bowl. Add soy sauce, sesame oil, orange and lime juice, and fresh ginger. Let marinate for about 10 minutes.
  • Spread chipotle mayo on each tostada. Evenly mound the tuna on each tostada and top with black sesame seeds, fried leek, and avocado. Serve tuna tostadas with extra chipotle mayo.
