  • 2 tomatoes, blanched
  • 2 cloves garlic, roasted
  • 1/4 onions
  • 1 cup bean broth
  • 1 cup beans
  • 1 tablespoon oregano
  • 3 pasilla chiles, trimmed, seeded, and rehydrated
  • some epazote
  • 1 pinch salt and pepper
  • 1/2 cups chorizo
  • 1 cup fideo pasta
  • 1 cup chicken broth
  • 1/4 cups queso fresco, for garnish
  • 4 tablespoons pasilla chile, fried, cut into round slices, for garnish
  • 1/4 avocados, fanned, for garnish

  • For the soup base: In a blender, combine garlic, onion, beans, bean broth, oregano, pasilla chile, epazote, salt, and pepper and blend until a homogeneous mixture is obtained.
  • In a small pot, cook chorizo until fat is rendered out. Remove chorizo and set aside. In the same pot, fry fideo pasta until golden brown.
  • Add chicken broth and cook for 10 minutes. Add bean broth and a bit of epazote. Cook until fideo pasta is cooked through.
  • Serve bean fideo soup in a soup bowl topped with chorizo, queso fresco, fried pasilla chile round slices, and avocado.
