  • 4 tomatoes, cut into quarters
  • 1/4 onions
  • 1 clove garlic
  • 1 tablespoon oregano
  • 4 cups chicken broth
  • salt
  • pepper
  • 2 tablespoons vegetable oil
  • 1 cup pearl paste
  • 1 cup black beans, canned and drained
  • cilantro, for garnish

  • Combine onion, garlic, oregano, and chicken broth in a blender and blend for 2 minutes or until smooth.
  • In a pot, heat vegetable oil over medium-low heat and cook pearl pasta for 4 minutes or until golden brown. Strain mixture through a fine-mesh sieve and pour into the pot. Season and cover. Cook for 15 minutes or until pasta softens.
  • Add beans and cook for 5 more minutes. Season with salt and pepper.
  • Serve beans & pearl pasta soup in a soup bowl and garnish with cilantro.
