Charro Beans with Chorizo

  • 1 cup bacon, cut into small-sized cubes
  • 1 cup chorizo, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 cup sausages, cut into small-sized cubes
  • 3 Jalapeño chiles, chopped
  • 2 cups pinto beans, cooked
  • 2 cups bean broth
  • 1/2 cups pork rinds, cut into chunks
  • 1/4 cups fresh cilantro, finely chopped
  • 1 pinch salt
  • 1 cup epazote, leaves, fried, for garnish

  • In a large pot over medium heat, fry bacon and chorizo until cooked through. Add onion and cook until translucent. Add garlic, sausages, Jalapeño chiles, beans, and bean broth. Cook for 10 minutes or until it comes to a boil.
  • Add pork rinds and fresh cilantro and season.
  • Serve charro beans with chorizo on a plate garnished with fried epazote leaves, serrano chile, and pork rinds cut into chunks.
