Charro Beans with Sausage

  • 2 tablespoons vegetable oil
  • 1 cup bacon
  • 1 cup chorizo
  • 1 cup sausages
  • 1 güero chile
  • 1 tomato
  • 1/2 red onions
  • 1 Jalapeño chile
  • 4 cups pinto beans, cooked

  • fresh cilantro, finely chopped

  • In a pot or saucepan over medium heat, heat vegetable oil and fry bacon for 3 minutes or until fat is rendered out. Add chorizo and fry for 4 minutes. Add sausages and güero chile and fry for 3 more minutes. Remove chorizo, sausages, and bacon from the pot and set fat aside.
  • In the same pot, fry onion, Jalapeño chile, and tomato for 5 minutes. Bring chorizo, sausages, and bacon back into the pot and add cooked pinto beans. Add a bit of water and cook for 10 minutes giving the flavors time to meld. Season with salt and pepper.
  • Serve charro beans with sausage garnished with queso fresco, pork rinds, cilantro, and onion.
