  • 1/8 onions
  • 1 clove garlic
  • 1 sprig epazote
  • 1/2 cups sour cream
  • 2 cups cow's milk
  • 2 chipotle chiles in adobo sauce
  • 1 tablespoon vegetable oil

  • 1 cup tortillas, fried and cut into strips, for garnish
  • 1 cup panela cheese, cut into cubes, for garnish
  • 1 avocado, for garnish
  • 4 leaves epazote, for garnish

  • Preparation: For the creamy beans & chipotle soup: Combine beans, onion, garlic, epazote, cream, milk, and chipotle in a T-fal Infiny Force Blender®. Blend with the “soup” setting for 10 minutes or until smooth.
  • In a pot, heat oil over medium heat. Add cream and bring to a boil. Lower heat and cook for about 10 minutes. Season with salt.
  • Serve creamy chipotle black bean soup garnished with fried tortilla strips, panela cheese, avocado, and fresh epazote.
