  • 3 tablespoons butter
  • 1/4 onions
  • 1 clove garlic
  • 3 cups green beans
  • 1 1/2 cups almonds, sliced and toasted
  • 4 cups chicken broth
  • 2 cups sour cream
  • 2 tablespoons butter
  • 1 cup button mushrooms
  • salt
  • pepper
  • some almonds, for garnish
  • some chives, for garnish

  • In a pot, heat butter over medium heat. Add onion, garlic, green beans, and almonds. Sautée for a few minutes. Add chicken broth and cream. Season with salt and pepper. Cook for 7 minutes.
  • Transfer previous mixture to a blender and blend for 7 minutes. Pour back into the pot and cook for 10 minutes. Season with salt and pepper.
  • In another skillet, cook button mushrooms with butter. Season with salt and fry for 5 minutes. Set aside.
  • Serve creamy green bean and almond soup hot and garnish with button mushrooms, chives, and sliced almonds.
