  • On a wooden chopping board, peel and cut potatoes into medium-sized cubes.
  • Place potato cubes in a pot with water and cook for 15 minutes.
  • Add onion, garlic, and milk. Season with salt and pepper and cook for 10 minutes. Add American cheese. Once cheese has melted, remove from heat.
  • Transfer previous ingredients to a blender and blend for 5 minutes until smooth. Set aside.
  • In a skillet, cook bacon for 5 minutes or until golden brown. Drain on a paper towel-lined plate to remove excess oil and place aside.
  • Serve creamy potato bacon soup in a soup bowl. Garnish with bacon, American cheese, and parsley leaves.
