  • 2 tablespoons butter
  • 1/2 onions, chopped
  • 1 clove garlic, chopped
  • 1 cup Poblano chile strips
  • 3 cups spinach
  • some salt and pepper
  • 2 cups evaporated milk
  • 1 cup whipping cream
  • 1 cup chicken broth
  • 1 tablespoon vegetable oil
  • some spinach, fried, for garnish
  • some Poblano chile strips, for garnish
  • some Cotija cheese, for garnish
  • some tortillas, fried, cut into strips, for garnish

  • In a skillet over medium heat, melt butter and fry onion and garlic. Add Poblano chile strips and spinach. Cook for 5 minutes and season with salt and pepper.
  • Add evaporated milk, whipping cream, and chicken broth. Bring to a boil, cover skillet, and cook for about 10 minutes. Remove from heat and cool slightly.
  • Transfer previous preparation to a blender and blend until smooth. Strain if necessary. Return mixture to skillet and cook 10 more minutes.
  • Serve the creamy spinach and Poblano chile soup with fried baby spinach, Poblano chile strips, Cotija cheese, and fried tortilla strips.
