  • 1 teaspoon coconut oil
  • 1 cup kale, rinsed
  • 1/2 cups carrot, peeled, cut into small-sized cubes
  • 1/2 cups zucchini, cut into small-sized cubes
  • 1/2 cups cabbage, shredded
  • 1/2 cups broccoli, cut into small-sized florets
  • 1/2 cups tomato, chopped and seeded
  • 1/2 cups quinoa
  • 5 cups water
  • 2 teaspoons salt
  • 1 teaspoon ground pepper

  • In a pot, heat coconut oil over medium heat. Add kale and cook for 2 minutes. Add carrots and cook for 3 more minutes. Add zucchini, cabbage, broccoli, and tomato and cook for 5 more minutes. Mix thoroughly.
  • Add quinoa and water. Bring to a boil for 15 minutes until vegetables and quinoa are cooked through. Season and serve kale & quinoa vegetable soup.
