  • 4 cups nopal
  • some water
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tomatoes
  • 1/4 onions
  • 2 cloves garlic
  • 4 guajillo chiles, rehydrated
  • 5 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 2 cups button mushrooms, sliced
  • 1/3 cups tomato purée
  • 2 leaves epazote

  • On a chopping board, cut nopales into thin strips with a knife.
  • In a pot with boiling water, cook nopales with salt and a bit of baking soda.
  • On a griddle, roast tomatoes, onion, and garlic. Transfer to a blender. Add rehydrated guajillo chiles, chicken broth, salt, and pepper, and blend until smooth.
  • In a small pot over medium heat, heat oil. Add button mushrooms, nopales, salt, and pepper. Add tomato purée and the blended mixture and bring to a boil. Add epazote and cook for 20 minutes.
  • Serve nopal soup with some drops of lime juice.
