  • 2 cups asparagus
  • 1/4 onions, cut into cubes
  • 4 cups vegetable broth

  • In a skillet, heat olive oil over medium heat. Add potato and cook for 5 minutes until softened.
  • Add asparagus, garlic, onion, and cook for 5 more minutes.
  • Transfer ingredients to a blender, add chicken broth, and blend until smooth.
  • In a pot, heat oil over low heat. Pour in previous mixture. Season with salt and pepper. Cook for 10 minutes or until slightly thickened.
  • Serve vegan cream of asparagus soup hot. Garnish with croutons and asparagus.
