  • 1 cup zucchini
  • 1 cup chayote
  • 1 cup carrot
  • 1 cup broccoli, cut into florets
  • 1 cup spinach, cut into thin strips
  • some vegetable oil
  • 1/2 cups tomato purée
  • 3 cups chicken broth
  • 1/4 bunches cilantro
  • salt
  • pepper
  • 3/4 cups chicken, shredded

  • On a chopping board, cut vegetables with cookie cutters. Heat oil in a pot over medium-high heat and fry vegetables.
  • Add tomato purée, chicken broth, cilantro, salt, and pepper and cook for 8 minutes.
  • Add shredded chicken and cook for 1 minute.
  • Serve vegetable soup in a soup bowl.
