  • In a saucepan over medium heat, heat oil. Fry onion and garlic until translucent. Add rice. Using a wooden, gently stir to keep rice from breaking and sticking. Cook rice until semi-brown.
  • Add chicken broth, salt, carrots, red bell pepper, peas, yellow corn kernels, and cilantro. Mix with a spoon until completely incorporated. Lower heat, cover, and cook for 20 minutes or until water evaporates and rice is cooked through. Remove spring rice from heat.
  • Serve spring rice on a plate garnished with cilantro.
